Middle Eastern Salmon with tomato, cucumber, and dill salad… Spice things up with this light and flavorful meal!
Salmon is a great way to get plenty of vitamins and essential nutrients that you need to fuel your body, like vitamins A, D, and B12. It’s also packed with protein, antioxidants, and omega-3 fatty acids.
This recipe brings out its great taste by combining it with a fresh and flavorful combination of veggies and spices. The star of the show is a traditional Middle Eastern seasoning blend called Za’atar, whose bold and earthy taste just might become your new favorite.
It’s easy to make and super quick, which means you can easily add it into your routine of weeknight meals and healthy lunches.
Middle Eastern Salmon

Makes 4 servings.
Here’s what you’ll need:
• 4 cup Cucumber sliced
• 2 cup Cherry Tomatoes halved
• 1/4 cup Fresh Dill, chopped
• 1/4 cup Apple Cider Vinegar
• 1/4 tsp Salt (optional)*
• 1/4 tsp Black Pepper
• 1 1/2lbs Boneless Skinless Salmon fillets
• 1 tbsp Za’atar spice blend
• 1 medium Lemons quartered
Here’s what to do:
1 — First, preheat your oven to 350*F.
2 — Next, to make the salad, combine the first five ingredients in a large bowl and toss well.
3 — Then season the salmon on both sides with Za’atar, and place on a foil-lined baking sheet. Roast until internal temperature reaches 145*F.
4 — When it’s ready, serve roasted salmon with salad and lemon wedges.
