Skinny Chicken Queso

Always craving Mexican food? You’re gonna love this Skinny Chicken Queso dip!

It contains yummy protein, flavorful fresh herbs and veggies, and plenty of cheesy goodness. You know you can’t go wrong with queso!

While queso and other dips like it are most often served with chips to dip, we suggest swapping those out for slices of fresh, crunchy celery for a much healthier option.

Skinny Chicken Queso

Lean and Green Counts:
🥦 1 Lean
🥦 3 Green
🥦 1 Healthy Fat
🥦 1 Condiment

Makes 4 servings.

Here’s what you’ll need:

• 12 oz Boneless Skinless Chicken Breast shredded
• 1 1/2 cup Reduced Fat Sharp Cheddar Cheese shredded
• 3/4 cup Low-fat Greek Yogurt
• 4 tbsp Reduced-Fat Cream Cheese
• 1 cup Rotel Diced Tomatoes w/ green chilies
• 1/2 cup Fresh Cilantro chopped
• 1lb Mini Sweet Peppers halved
• 2 1/2 cup Celery halved

Here’s what to do:

1 — First, preheat oven to 350*F.

2 — Next, cook and shred the chicken. Then add it with the sharp cheddar cheese, cream cheese (softened), and Greek plain yogurt into a bowl. Then mix together and pour into a lightly greased casserole dish.

3 — Bake for 20 minutes until heated thoroughly.

4 — While the cheese is heating, chop the cilantro, mini sweet peppers (halved lengthwise, stems and seeds removed), and the celery into halves used for dipping.

5 — Then, serve hot!
