The addition of plain Greek yogurt gives it a great texture. Add in the delicious curry flavor, crispy fresh lettuce, crunchy peanuts, and fresh herbs, and you’re left with an unexpected combination that you’ll love to make again and again. Fair warning, though… you might get addicted to this one!

Here’s what you’ll need:
• 10 oz. canned chicken breast
• 1/2 cup plain nonfat Greek yogurt
• 1/2 cup celery, diced
• 2 tsp curry powder
• 2 tbsp fresh parsley, chopped
• 1/4 tsp salt
• 1/4 tsp black pepper
• 1 large romaine lettuce
• 2/3 oz. peanuts, chopped
Makes two servings.
1 — First, mix the chicken, yogurt, celery, herbs, and spices together in a medium bowl.
2 — Then, prepare the wraps by topping lettuce leaves with chicken salad, sprinkling with peanuts, and rolling wraps.
