Cheesy, bacony, and won’t interrupt your healthy eating goals! This is one of those quick, home-cooked meals that feels like a comfort food. This chicken dish also includes spinach and sun-dried tomato for added nutritional value.

Ingredients
Here’s what you’ll need to make this cheesy bacon smothered chicken with vegetables:
- 10oz thin sliced chicken breast
- 3 tsp olive oil
- 6 slices Canadian bacon, chopped
- 4 slices low fat mozzarella cheese
- 1 cup unsweetened vanilla almond milk
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp fresh parsley
- 5 tbsp reduced fat parmesan cheese, grated
- 1 cup fresh spinach, chopped
- 1 cup sun dried tomatoes, chopped
Here’s what to do:
1 — In a large skillet, cook the Canadian bacon. Drain off the fat, chop cooked bacon, and set aside for later.
2 — In the same skillet, add olive oil and allow to heat. Lay thinly sliced chicken in pan on medium to high heat and cook approximately 4 minutes on each side or until brown on each side and cooked completely.
3 — Remove chicken from the pan and set aside. In the skillet, add the almond milk, chicken broth, garlic powder, parsley, salt, pepper, and parmesan cheese. Whisk over a medium-high heat until it begins to thicken.
4 — Add in the spinach and sun-dried tomatoes and allow it to simmer until the spinach starts to wilt. Turn heat to low and return chicken to pan one piece at a time. Lightly coat with the sauce and place the sliced mozzarella cheese over top. Sprinkle with chopped bacon and cover for 1 minute or until cheese completely melts.
