Paella is a saffron-flavored Spanish rice dish that’s vibrant, colorful, and full of flavor. This healthy version is packed with lots of nutritious veggies, riced cauliflower to keep it light, and chicken breast for added protein.
This recipe makes 4 servings but can easily be doubled (or tripled!) if you’ve got guests on the way.
It also calls for something you may not have in the cabinet, but will be worth tracking down. Look for Upton’s Natural Chorizo Seitan Crumbles (vegan!) at Whole Foods or wherever you buy your favorite healthy foods.
