Ingredients
Here’s what you’ll need to make this zucchini pizza casserole:
- 3 1/2 cups zucchini, shredded (2 medium zucchini)
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup parmesan cheese, grated
- 4 oz. reduced-fat mozzarella cheese, shredded
- 4 oz. reduced-fat cheddar cheese, shredded
- 1 can light cooking spray
- 1/2 lb. lean ground beef
- 1 (14.5oz) can Italian diced tomatoes
- 1 small green bell pepper, chopped
Here’s what to do:
1 — Preheat your oven to 400*F.
2 — Place shredded, unpeeled zucchini in a strainer and sprinkle with salt. Let stand 10 minutes then press to release moisture.
3 — Combine zucchini with eggs, parmesan, and half of the mozzarella and cheddar cheeses.
4 — Press mixture into a lightly greased baking dish and bake uncovered for 20 minutes.
5 — Meanwhile, cook the beef and onion in a medium skillet until done. Drain any liquid and then stir in diced tomatoes.
6 — Pour beef mixture over the zucchini and sprinkle with the remaining cheddar and mozzarella cheeses. Top with green peppers.
7 — Bake for an additional 20 minutes or until heated through.
