Hello!

Faux Baked Potato Soup

Recipes

December 1, 2023

Comfort food coming right up! Potato soup is one of those hearty, well-loved dishes that can please just about any crowd. It’s usually high in calories, though. Luckily, we love this cauliflower alternative! Lighter and more nutrient dense but full of the same great flavor.

Make this single serve recipe for a quick meal or multiply as needed to feed the family. (Go ahead and multiply it… you’ll be glad you did!)

Lean and Green Counts:

🥦 3 Green
🥦 2 Condiment

Ingredients

Here’s what you’ll need to make this healthy and delicious faux baked potato soup:

  • 1 cup low sodium chicken broth
  • 1.5 cups raw cauliflower, chopped
  • 1 slice Laughing Cow cheese wedge
  • 1/2 cup low fat cheddar cheese, shredded
  • 1/3 cup cooked turkey bacon
  • 1/4 cup water
  • 1/4 tsp garlic powder
  • 1/4 tsp black pepper

Here’s what to do:

1 — In a pot, bring chicken broth and chopped cauliflower to a boil. Reduce heat to a simmer and cook covered for 15 minutes.

2 — Remove from heat and place in a blender to puree. Pour pureed cauliflower back into the pot, turn on a low setting, and add Laughing Cow cheese wedge, 1/4 cup of cheddar cheese, 1/4 cup of chopped turkey bacon, 1/4 cup of water, garlic powder, and black pepper. Stir together to blend.

3 — Remove from heat. Top with leftover shredded cheese and turkey bacon.
